@chimbamiami, the beloved Midtown Miami destination for Latin-American cuisine, has launched a new menu of signature dishes by celebrated Argentinian chef and sommelier Pablo Ranea. Known for his creative take on gastronomy, Ranea’s offerings build on the diverse approach of Chimba’s resident chef Kevin Acosta, who honors the unique flavors of countries like Mexico, Peru, Argentina, Chile, and Uruguay.

Chimba’s new menu lists dish iterations that guests can’t find anywhere else in Miami – appetizers such as Birria Arepa, topped with beef birria, plantain, and smoked gouda, and Ceviche Nikkei, a medley of sushi grade tuna, rocoto e pineapple ponzu, crispy calamari, avocado and cilantro. For main courses, Ranea tapped into Peruvian recipes to create signature Pulpo al Olivo, an octopus dish with botija olive aioli, quinoa risotto, huancaína sauce, and chimichurri oil. He also combined favorite Latin ingredients for the Fresh House Rigatoni Pasta, tossed with ribeye and mushroom ragu. Mouthwatering desserts like the Malbec and Sabayon Homemade Ice Cream with quince and caramelized walnuts burst with flavor, and the Panqueque Dulce De Leche and Homemade Ice cream makes for a comfort sweet ending, crowned with vanilla crumbles and raspberry coulis.
